Day Seven: It finally happened

We almost made it through our first week loving everything… but it was not to be. No recipe for today as what I made was just plain terrible.

The vegetable was a cheesy-spinach type thing.  Whoever created this recipe must not be able to taste salt, or one of those people who dumps a couple tablespoons of salt on everything they eat without even tasting it.

I love you salty people, but I simply do not like to be able to taste salt like that. I was told by a chef in my early cooking days that black pepper and salt are on the table for a reason – to add to food, but you should never be able to taste it in the food. Both are utilized to bring out flavor, not to be the flavor.

To top it off, I made Cajun Blackened Swordfish, using the same recipe that I used for Cajun Blackened Tuna (since I was trying a new veggie, I opted for simple meat).

 

I received my new cast iron skillet the day before and was all excited to use it for the first time.  I was in no way prepared for the smoke!

Our entire condo filled with smoke, the dog hid in a closet, the handle pad I bought caught on fire, Doug and I were both coughing with eyes stinging – we had all windows open and two box fans going to clear the place out.

Needless to say, I’ve since done some research on cast iron blackening, and hopefully will not repeat this.  The fish came out great, but it was quite the experience.
